Chef Joe Papach opened The Harvey House in downtown Madison in 2021. A Johnson & Wales graduate, he cooked at high-end restaurants in Providence, Boston and Chicago, as well as Gramercy Tavern in New York. Papach worked at Quince and Cotogna in San Francisco and the French Laundry in Napa, where he was sous chef for six years.
